Savory Flax Seed Waffles

Ingredients (Makes: 3–4 waffles)

  • 1/4 cup flax seeds (ground) (40 gr)

  • 1 egg

  • 100 g boiled mashed sweet potato

  • 3-4 tbsp unsweetened almond milk (35 g)

  • 1/4 cup Pecorino Romano or Parmesan cheese (20 g) (finely grated)/nutritional yeast if you are not using dairy

  • 2 tbsp almond flour/coconut flour (10 - 15 g)

  • 1/2 teaspoon aluminum free baking powder

  • pinch of salt

  • cracked black pepper

  • 1 tbsp olive oil

  • 1-2 tbsp fresh chopped chives (or any other herbs)

Instructions:

  1. Preheat your waffle maker. Lightly grease if needed.

  2. Grind flax seeds into a fine meal (if not already ground).

  3. In a bowl, mash the sweet potato until smooth.

  4. Add the egg, almond milk, olive oil, and mix well.

  5. Stir in flax meal, almond/coconut flour, and grated Pecorino/Parmesan.

  6. Let the batter rest 2–3 minutes to thicken slightly.

  7. Spoon into waffle maker and cook until golden and crisp.

  8. Serve warm with smoked salmon, a side of avocado, and salad.
