Savory Flax Seed Waffles
Savory, fiber‑rich waffles that are pure metabolic magic on a plate
Ingredients (Makes: 3–4 waffles)
1/4 cup flax seeds (ground) (40 gr)
1 egg
100 g boiled mashed sweet potato
3-4 tbsp unsweetened almond milk (35 g)
1/4 cup Pecorino Romano or Parmesan cheese (20 g) (finely grated)/nutritional yeast if you are not using dairy
2 tbsp almond flour/coconut flour (10 - 15 g)
1/2 teaspoon aluminum free baking powder
pinch of salt
cracked black pepper
1 tbsp olive oil
1-2 tbsp fresh chopped chives (or any other herbs)


Instructions:
Preheat your waffle maker. Lightly grease if needed.
Grind flax seeds into a fine meal (if not already ground).
In a bowl, mash the sweet potato until smooth.
Add the egg, almond milk, olive oil, and mix well.
Stir in flax meal, almond/coconut flour, and grated Pecorino/Parmesan.
Let the batter rest 2–3 minutes to thicken slightly.
Spoon into waffle maker and cook until golden and crisp.
Serve warm with smoked salmon, a side of avocado, and salad.
