Ingredients:

  • 2 egg whites

  • 1 tbsp erythritol (works better in this recipe than alluloze)

  • A dash of cinnamon

  • 1 tsp cornstarch

  • tiny pinch of salt

  • Parchment paper + a light oil spray

For the druzzle:

  • 2 tbsp butter, gently warmed

  • 1 tsp honey

Directions

  • Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper and lightly grease it.

  • Whip the egg whites until foamy. Add erythritol and continue whipping until soft peaks form.

  • Gently fold in the cornstarch, cinnamon, and diced apple, being careful not to deflate the mixture.

  • Spoon the mixture onto the prepared parchment paper, shaping it into a fluffy mound or small clouds.

  • Bake for about 20 minutes, until lightly golden and set on the outside.

  • While baking, mix the warmed butter with honey to create a glossy drizzle.

  • Remove from the oven and drizzle the warm butter-honey mixture over the egg white clouds before serving.

Tip:

Serve warm for a soufflé-like texture, or let it cool for a light, meringue-style dessert.
